This is a delicious dish ! one of my favourite. Bitter gourd taste real good with fried eggs.
Try it and you will understand what I meant !


1 bitter gourd (or 500g bittergourd) , cut into thin slices.
2 eggs, beaten
a pinch of salt to taste
a handful of dried shrimps
2 cloves garlic, chopped

Cut bittergourd lengthwise into half and remove inner pulp and seeds with a spoon.
To reduce the bitter taste: Rub the bitter gourd with a good amount of salt and let it sit for 5 minutes. Rinse well to remove salt (This is optional if you like it bitter)

1. Heat up wok (or frying pan) with a little oil
2. Stir fry the garlic and dried shrimps under medium heat till it starts to turn brown.
3. Add the bittergourd slices ,dried shrimps, chopped garlics and stir fry over high heat for about 2-3 minutes until its cooked (or turn translucent).
4. Turn off the heat and drizzle the beaten egg over. Mix well so that the egg gets cooked by the residual heat of the wok.
5. season to taste with salt.
6. Serve hot.
